[Cooking] Mmmm brownies...

So I've been meaning to make more brownies lately. But I wanted to add white chocolate chips to them. I don't think there's enough foods with white chocolate chips. X-D

Yes yes, I know some people don't think they are really chocolate, but I don't care. I like them. X-D I even like the white chocolate mocha at Starbucks.

I also use a lot less sugar then the recipe calls for. Partly because I'll be using white chocolate chips instead of walnuts and partly because I don't like sickening sweet deserts. I've basically used 3/4 cups less sugar and I still think it's perfectly sweet. I should have someone else try them to see what they think. I'm probably just strange. ;-)

Modified Brownie Recipe
This brownie recipe is modified from one found on Epicurious.com

1 cup unsalted butter, at room temperature
1 cup of sugar
1/2 cup of unsweetened chocolate powder
3 large eggs
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/4 teaspoon fine sea salt
1 cup of white chocolate chips

1. Preheat the oven to 350 degrees F. Butter and flour a 9x13-inch square pan.

2. Place the softened butter in a large bowl or the bowl of an electric mixer and whisk until it is pale yellow and light. Add the sugar and whisk ntil the mixture is light and fluffy. Whisk in the chocolate powder, then add the eggs one at a time, whisking after each addition. Whisk in the vanilla, then sift in the flour, cocoa and salt and fold them in until combined. Fold in the white chocolate chips until they are will distributed throughout the batter.

3. Transfer the batter to the prepared baking pan, smooth it out evenly and bake in the center of the oven until the brownies have puffed slightly around the edges and are shiny on the surface, about 30 minutes. They will be very moist in the center. Remove from the oven and let cool before cutting into squares.

The great thing about making your own brownies, is that you get to lick the mixer paddles and all the utensils afterwords. X-D The sucky thing of course is that you have to wash everything when you're done. -_- Oh well, win some you lose some. :)

Oh yah, I don't have a flour sifter yet... so I just randomly put in the 3/4 cups of AP flour. Yah yah, I know it'll be off but for brownies it's ok. Hmm... need to buy a sifter...

The brownies turned out surprisingly well. Perfectly sweet but not too sweet and the white chocolate chips are a lovely addition. And of course, the house smells of brownies. X-D

Sorry, no pictures. But they are brownies. Brown little squares with white bits inside. X-D
